Taj Triangles - Oven Baked Vegetable Samosas

This family recipe test is taken from The Minichefs Cookbook by Claire McAvoy, which is a brilliant cookbook with lots of savoury recipes as well as sweet, and some great twists on everyday food.

This recipe Taj Triangles is a samosa using frozen mixed veg, filo pastry and oven baking for an easy and healthy alternative to the very spicy and greasy samosas you often end up with in shops.

We would like to introduce our new little Chef Cassian who made these samosas. My own children are now a bit too big to test recipes accurately for little kids, but they did lend Cas a hand when he needed one!


200g (7oz) frozen mixed chopped vegetables, defrosted
1 tablespoon of mild or medium curry powder
2 tablespoons of mango chutney
100g (3 1/2 oz) cooked rice - white brown or basmati. We used basmati.
270g (9oz) filo pastry (you need 6 sheets for this amount)
2 tablespoons of sunflower oil

The oven temperature for the samosas was 220 degrees C, 425 degrees F, Gas Mark 7.





Because the recipe uses pre-chopped frozen vegetables, you can get straight on with mixing. First of all Cas put the cooked rice, the vegetables, the mango chutney and the curry powder into the bowl.

Then Cas mixed everything together to get all the rice and vegetables covered in the powder and sauce.

Next we needed to get the pastry ready to fill.  We took a sheet of filo pastry each and cut each one into half lengthways, to make two thin rectangles for each sheet. Cas's mum Holly helped a little with the cutting because the pastry is very thin and it slides about on the table a little when cutting it. An adult can help to hold the knife steady, or to hold the pastry carefully to stop it tearing too much while the child cuts through. Cas's first one was a bit wonky but after that he really got the hang of it. Jacob and Anna were able to do theirs by themselves if they were slow and careful.

Then the fun starts - filling and folding the samosas. Cas spooned a bit of mixture on to the top of the rectangle. Then you have to fold the pastry down in triangles, alternating sides all the way down. Cas started off with a bit of help from Mum and then started doing them by himself.

The first time Cas did one by himself it was a bit of a wonky triangle, but he soon fixed it. By the time he got to the next one he was making really good triangles.




Once all 12 parcels had been folded up, Cas brushed them with vegetable oil, brushing on one side, then turning them onto a baking sheet the other way up, and brushing the other side with oil once they're on the baking sheet.

The samosas go in to the oven for about 20 minutes, until they are golden. Here's how ours came out.

Some of the edges were a bit brown! But they were super crispy and flaky. When we cooked them a bit less or used too much filling they were a bit soggy, and if we underfilled them they burned a bit in the corners. But considering it was the first time they had made them, they came out really well, and were really tasty. Here is everyone enjoying their samosas.





As usual, our cooks and parents ate and reviewed their handiwork. No good cooking something interesting if it tastes rubbish. Here are our verdicts for the Taj Triangle vegetable samosas:

The Verdicts:

Jacob - took too many bites to get to the filling in the middle and the middle was too wet. On the second, less full one it was much better. Need to practise filling it a bit.
9/10 Anna - little bit spicy for me, but everything else is good. Like that it is crunchy and not oily.
10/10 Cas - It's SPICY!
8/10 Holly (Cas's Mum) - would personally prefer it spicier if we were making it for adults, but for children this is a good amount of spice.
7/10 Joanne (Jacob and Anna's Mum) - I like that it is lighter than the deep fried versions. Getting the filling amount right is important to make it crisp and not burnt or soggy.
