The Foodies / Resources
These pages are a mixture of our own resources, and those we have found from other people and organisations. Some resources here have been provided by practitioners and parents who have tried and tested them, but you will have to assess for yourself the benefits for your own children and whether it will meet the guidelines you are working with.
Some resources are created by food industries. While they are not allowed to promote intentionally inaccurate information, they will naturally wish to promote their product as the most important part of the diet. However some of the resources they provide are very good when used in context. Wherever I am aware that a resource is industry sponsored I will say so, and you can exercise your common sense in evaluating it.

Mini Sweetcorn, Bacon and Chive Frittatas
This recipe was sent in with kind permission by Fi Bird. I love that it uses baking for a the kind of comfort food which would normally be fried. Ingredients Makes 12
Oil for greasing
4 rashers back bacon
1 heaped tablespoon sweet corn
1 tablespoon grated cheese
6 eggs
150ml milk
Freshly ground pepper
1 tablespoon chives Put the oven on 200ºC Fan180ºC Gas 6 1. Oil a 12 muffin mould tray.
2. Grill the bacon and cut it into bite sized pieces.
3. Drain the sweet corn and mix it in a bowl with the bacon
4. Use the dessert spoon to divide the sweet corn and bacon, between the muffin moulds.
5. Sprinkle a little of the cheese into each muffin tin.
6. Crack the eggs into a large mixing jug. Whisk the eggs using a balloon whisk or fork and
then whisk in the milk. 7. Season with ground pepper and pour the mixture equally into the muffin moulds.
8. Snip the chives into very small pieces with scissors, and sprinkle a little on top of each
mould. 9. Put the tray into the oven and bake for 10 minutes or until the frittatas have set*.
10. Allow to cool for 5 minutes, and then loosen them off with a palette knife and turn them
out. They are yummy hot and delicious cold in a lunch boxes too. You can test that the frittata has set by sticking a skewer in – it should come out clean. |
