These pages are a mixture of our own resources, and those we have found from other people and organisations. Some resources here have been provided by practitioners and parents who have tried and tested them, but you will have to assess for yourself the benefits for your own children and whether it will meet the guidelines you are working with.

Some resources are created by food industries. While they are not allowed to promote intentionally inaccurate information, they will naturally wish to promote their product as the most important part of the diet. However some of the resources they provide are very good when used in context. Wherever I am aware that a resource is industry sponsored I will say so, and you can exercise your common sense in evaluating it.

No Bake Choc Apricot Oat Treats

This is a clever and more nutritious (but still very treaty) variation on the crushed-biscuit-no-bake-choc-slice so beloved by everyone. It uses smashed up oatcakes and dried apricots instead.

This recipe was given to me by Fiona Bird of Kids Kitchen.

It makes about 24 cakes using a mini-muffin or cupcake tin.


Ingredients

100g rough oatcakes
150g dark chocolate
50g butter
2 tablespoons dried chopped apricots


Method

1.  Lightly oil the mini muffin tins or line them with muffin cases.
2. 
Put the oatcakes into a strong plastic bag and seal the bag with a freezer tag or a peg. Gently roll a rolling pin over the bag to crush the oatcakes.
3. 
Break the chocolate into small pieces and put it into a mixing bowl with the butter. Fit the bowl on top of a pan with hot water in it and simmer over a gentle heat. The steam from the water will melt the chocolate and butter.
4.  Carefully remove the bowl from the heat, using an oven cloth. Add the crushed oatcakes and apricots to the melted chocolate and butter and gently mix together. Be careful the bowl will still be warm.
5.  Use a teaspoon to put the mixture into the muffin trays. Put the muffin trays into the fridge to set the treats. (About 20 minutes). If you don’t use muffin cases run a blunt knife around the treats to ease them out of the tin.
